In vitro | Methods: A stable isotope dilution method was developed for the quantitative determination of 4-methyl-4-sulfanylpentan-2-one (4MSP) in hops. The method involved the use of 4-(13C)methyl-4-sulfanyl(1,3,5-13C3)pentan-2-one as an internal standard, selective separation of hop thiols on mercapted agarose, and gas chromatography (GC) × gas chromatography-time of flight mass spectrometry (GC-TOFMS) analysis.
