Maltooctaose is a specific length malt oligosaccharide produced by PFTA (Pyrococcus furiosus).
PFTA is a very specific enzyme that opens specific cyclodextrin molecules and produces maltooligosaccharides of specific lengths, in particular malthexaose, maltheptaose, and maltooctaose. [1]
